Fajita King Ranch Casserole

Ingredients

  • 1 tbsp Extra Virgin Olive Oil
  • 8 oz Sliced mushrooms
  • 26 oz Fully Cooked Chicken Thigh Fajitas
  • 32.5 oz Texas Ranch Casserole Mix
  • 1/2 cup Half & half
  • 6 Mixla tortillas, sliced into strips
  • 1 cup Mexican Style Blend Shredded Cheese

Instructions

  1. Preheat oven to 425ºF. Place a large pan over medium-high heat.
  2. Add oil and mushrooms. Sauté mushrooms for 4 to 5 minutes, just to begin to brown.
  3. Add chicken fajitas, Texas Ranch starter and half and half to pan, bring to a simmer.
  4. Layer tortillas, chicken mixture and cheese in a 9" X 13" pan, top with cheese.
  5. Bake for 15 to 20 minutes, or until cheese begins to bubble and brown around the edges.
  6. Chef's Note: Garnish as desired with fresh ingredients such as cilantro, avocado and salsa.
