English Muffin Tostadas with Avocado Chive Spread

Ingredients
- 1/2 cup Fresh chives, minced
- 1 Large avocado, pit removed, flesh scooped out
- 1/4 cup Extra virgin olive oil
- 1 cup Shredded lettuce, as needed
- 1 cup Cotija cheese, grated, plus more as needed
- 3 English muffin, plus more as desired
- 1/4 cup Lemons, juiced
- 1/3 cup Fresh cilantro, finely chopped, as needed for garnish
Instructions
- In a food processor, combine avocado, chives, lemon juice and olive oil. Pulse until smooth (add water if needed to achieve spreading consistency). Season to taste.
- Cut English muffins in half and toast until nicely crisp.
- Spread avocado mixture on each toasted muffin half then top with Cotija cheese, shredded lettuce and cilantro.
