English Muffin Tostadas with Avocado Chive Spread

Ingredients

  • 1/2 cup Fresh chives, minced
  • 1 Large avocado, pit removed, flesh scooped out
  • 1/4 cup Extra virgin olive oil
  • 1 cup Shredded lettuce, as needed
  • 1 cup Cotija cheese, grated, plus more as needed
  • 3 English muffin, plus more as desired
  • 1/4 cup Lemons, juiced
  • 1/3 cup Fresh cilantro, finely chopped, as needed for garnish

Instructions

  1. In a food processor, combine avocado, chives, lemon juice and olive oil. Pulse until smooth (add water if needed to achieve spreading consistency). Season to taste.
  2. Cut English muffins in half and toast until nicely crisp.
  3. Spread avocado mixture on each toasted muffin half then top with Cotija cheese, shredded lettuce and cilantro.
