Embered Hatch Chili & Sweet Corn Gazpacho

Serves 6

Ingredients

  • 2 cups Hatch peppers, diced small (about same size as corn)
  • 2 cups Fresh corn or frozen corn, cut off cobb if using fresh
  • 1 cup Extra virgin olive oil, divided use
  • 3 cups 100% vegetable juice
  • 3 cups English cucumbers, diced small, divided use
  • 1 cup Red bell peppers, diced small, divided use
  • 2 Peeled Garlic Cloves, crushed
  • 1 tbsp Sherry vinegar
  • 1/4 cup Fresh dill, tender leaves and stems tightly packed, plus more for garnish
  • 1 tsp Smoked paprika, as needed to garnish

Instructions

  1. Preheat broiler and set oven rack to sit 5 to 7 inches below broiler. Line a sheet pan with foil.
  2. Place Hatch peppers and corn in a bowl and add 1/4 cup of oil and a pinch of salt and pepper. Toss to coat and spread out evenly on prepared pan.
  3. Place in oven and broil for 3 to 5 minutes then use tongs or a spatula to toss peppers and corn, continuing to cook until nicely charred. Set aside to cool completely.
  4. Meanwhile, make gazpacho by adding vegetable juice, 1 cup cucumbers, 1/2 cup red peppers, garlic, sherry vinegar and dill to a blender. Blend on high speed until smooth.
  5. With blender running, slowly add 1/2 cup of oil in a thin stream until fully incorporated. Season to taste and set aside.
  6. To assemble gazpacho, pour pureed vegetables into a serving bowl. Fold in charred Hatch mixture followed by remaining cucumbers and red bell peppers. Mix well to combine and season to taste with salt and pepper. Garnish each bowl with fresh dill, a drizzle of remaining olive oil and a sprinkle of smoked paprika.
