Eggs in Clouds

Ingredients
- 4 Large eggs, yolks and whites separated
- 2 tbsp Fresh chives, chopped
- 1/4 tsp Ground black pepper
- 1/4 tsp Kosher salt
- 2 tbsp Shredded parmesan cheese, grated
- 1 tsp White balsamic vinegar, or white wine vinegar
Instructions
- Place the egg whites and vinegar into the bowl of a stand mixer, mix on high until the whites reach stiff peaks.
- Add in chives and parmesan cheese, continue to mix until fully incorporated.
- Spoon the egg whites onto the lined baking sheet then create a small nest for the yolk.
- Carefully spoon or drop the one egg yolk into each nest of whites. Season with salt and pepper and bake in a 350 oven for 3 to 4 minutes.
- Remove from the oven, and serve immediately.
