Eggs in Clouds

Serves 4

Ingredients

  • 4 Large eggs, yolks and whites separated
  • 2 tbsp Fresh chives, chopped
  • 1/4 tsp Ground black pepper
  • 1/4 tsp Kosher salt
  • 2 tbsp Shredded parmesan cheese, grated
  • 1 tsp White balsamic vinegar, or white wine vinegar

Instructions

  1. Place the egg whites and vinegar into the bowl of a stand mixer, mix on high until the whites reach stiff peaks.
  2. Add in chives and parmesan cheese, continue to mix until fully incorporated.
  3. Spoon the egg whites onto the lined baking sheet then create a small nest for the yolk.
  4. Carefully spoon or drop the one egg yolk into each nest of whites. Season with salt and pepper and bake in a 350 oven for 3 to 4 minutes.
  5. Remove from the oven, and serve immediately.
