Eggplant Parmesan Girasoli with Soft Garlic Sauce

Ingredients

  • 16 oz Spicy eggplant girasol ravioli
  • 1/2 cup Crushed red pepper, as needed for heat
  • 1 tsp Kosher salt, plus more as needed
  • 1 cup Extra virgin olive oil
  • 1 cup Garlic cloves

Instructions

  1. Place garlic, red pepper flakes and a large pinch of salt into a small sauce pot.
  2. Add enough olive oil to just cover garlic, approximately 1 cup. Set heat to medium-low and bring oil to almost a simmer, oil should never boil.
  3. Cook until garlic is slightly tan in color and soft, remove from heat set aside.
  4. Cook filled pasta according to package instructions, drain and add to a serving dish.
  5. Spoon olive oil sauce over pasta and garnish with Parmesan cheese and parsley if desired.
