Eggnog Baby Bundt Cakes

Ingredients
- 15.2 oz Vanilla Cake Mix
- 3.4 oz Vanilla Instant Pudding
- 6 Large Eggs, yolks only
- 1 1/4 cups Eggnog
- 4 tbsp Salted Butter, melted
- 8 oz Sour cream
- 1/2 tsp Nutmeg, preferably freshly ground from whole nutmeg
Instructions
- Preheat oven to 350ºF. Spray a multi-cup mini Bundt cake pan with short bursts of spray oil or non-stick coating and set aside.
- In a large bowl, mix together cake mix, instant pudding mix, egg yolks, eggnog, melted butter, sour cream and nutmeg. Beat with a hand mixer or stand mixer for 4 to 5 minutes.
- Divide batter evenly between baking cups (this batch will make about 24 - 4 oz mini-bundt cakes). Bake 20 to 22 minutes, or until cakes are golden brown on top. Cooking time will vary depending on size of pan used.
- Remove from oven and allow to cool for 10 to15 minutes in pan. Remove from pan and set on a cooling rack to cool thoroughly. Drizzle with Eggnog Cream Cheese Glaze if desired (recipe on heb.com)
- Chef's Note: Using freshly grated nutmeg brings a powerful, fresh nutmeg flavor to this recipe. Pre-ground nutmeg may be substituted, but it may require slightly more to get that rich flavor.
