Egg Salad Wrap

Ingredients

  • 6 Large eggs
  • 2 Haas avocado(s), sliced
  • 1 Limes, juiced
  • 12 oz Low Fat Plain Yogurt
  • 1 cup Medium pico de gallo
  • 6 Low carb soft tortillas
  • 5 oz Baby spinach

Instructions

  1. Place 6 eggs in a saucepan with enough water to cover them.
  2. Bring water to boil over high heat, cover and turn off heat. Leave eggs on stove 13 minutes.
  3. Remove eggs from pot and rinse with cold water until cool.
  4. Peel and chop eggs.
  5. Toss avocados in lime juice and set aside.
  6. Combine chopped eggs, 6 ounces of yogurt and pico de gallo in small bowl. Set aside.
  7. Spread 2 tablespoons yogurt on each tortilla.
  8. Arrange 12 baby spinach leaves in the center of tortilla.
  9. Divide egg mixture down the center of each tortilla, then top with 2 avocado slices and 6 more spinach leaves.
  10. Roll each tortilla like a taco and secure with a toothpick.
  11. Arrange wraps on a platter lined with remaining spinach leaves.
