Egg Salad Lettuce Wraps

Ingredients

  • 8 Large eggs, hard boiled then peeled & chopped
  • 1/4 cup H-E-B Peppercorn Ranch Dressing
  • 1/4 cup Sweet relish
  • 8 Romaine lettuce leaves
  • 1 cup Bell peppers
  • 1 cup Celery, chopped

Instructions

  1. Combine chopped cooked eggs, celery, 3 color peppers, dressing and relish in a medium mixing bowl.
  2. Cover the salad with plastic wrap and chill for 15 minutes or until ready to serve.
  3. Before serving, spoon 1/3 cup egg salad on each lettuce leaf and roll like a taco.
  4. Place the lettuce wraps seam side-down on the serving platter and serve.
