Egg and Italian Sausage Sandwich

Serves 4

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 1/2 cup Red bell pepper, julienned
  • 1/2 cup White onion, thinly sliced
  • 1/2 cup Baby bella whole mushrooms, sliced
  • 4 Sweet Italian sausage links
  • 1 tbsp Unsalted butter, plus more as needed
  • 4 Large eggs
  • 8 slices Asiago cheese bread

Instructions

  1. Heat olive oil in a medium size skilled then add peppers, onions and mushrooms. Cook 10 minutes, stirring occasionally, until tender. Cover and set aside.
  2. Grill or bake sausage on medium-high about 5 to 7 minutes or until internal temperature is 165ºF. Set aside while eggs cook.
  3. Melt butter in a non-stick pan. Add 2 eggs and cook about 2 minutes or until egg whites are no longer runny. Repeat with remaining eggs, adding additional butter as needed.
  4. Split sausages in half lengthwise.
  5. Serve sausage on toasted bread with pepper-mushroom mixture and a fried egg.
