Easy Turkey Tetrazzini

Ingredients

  • 8 oz Linguine, measured dry and broken in half
  • 4 tbsp Salted butter
  • 1 cup White onion, diced
  • 8 oz Whole White Mushrooms, sliced
  • 1 tbsp Fresh garlic clove, minced
  • 1 tbsp Unbleached all purpose flour
  • 1/4 cup Dry vermouth, or dry white wine
  • 2 cups Heavy cream
  • 1 cup Whole Milk
  • 5 oz Shredded parmesan cheese, grated
  • 4 cups H-E-B Meal Simple Shredded Turkey Breast
  • 1 cup Panko Plain Bread Crumbs

Instructions

  1. Preheat oven to 375°F. Lightly oil a 9 x 13-inch baking dish and set aside.
  2. Bring a large pot of water to a boil and add broken pasta. Cook just until al dente (about 10 minutes) then drain, reserving 1 cup of pasta water for the sauce.
  3. While pasta cooks, melt butter in a large skillet over medium heat. Add onions and mushrooms and cook for several minutes until onions become translucent and mushrooms begin to give up their liquid.
  4. Add garlic, dust pan with flour and cook an additional 3 minutes.
  5. Increase heat to medium-high, stir in vermouth and bring to a simmer. Add heavy cream, milk and pasta water, continuing to simmer until sauce begins to thicken.
  6. Add Parmesan cheese, cooked linguine and shredded turkey; stir until combined then transfer to prepared baking dish.
  7. Spread breadcrumbs and additional cheese over the top, if desired. Cover with foil, bake 20 minutes then uncover and bake an additional 10 minutes until breadcrumbs are browned.
