Easy Taco Mac

Serves 6
Ingredients
- 1 1/2 cups Whole wheat macaroni
- 2 tsp Extra virgin olive oil
- 8 oz 96% Lean Ground Beef
- 1 1/2 tsp Chili powder
- 1 Medium yellow onion, diced
- 1 Zucchini squash, chopped
- 1 cup Sweet white corn, frozen
- 1/2 cup Sweet Corn on the Cob, each cut into 3 pieces
- 1/2 cup Mild Chunky Salsa
- 4 oz Easy Melt Cheese
Instructions
- Cook pasta according to package directions, drain and set aside.
- In a large skillet, heat olive oil on medium-high.
- Add ground beef and chili powder, and cook until thoroughly browned, approximately 10 minutes. Drain fat and return meat to pan.
- Stir in onion, zucchini and corn. Cook until onions are translucent.
- Add salsa and cheese and cook until cheese has melted and is creamy.
- Mix in pasta and serve.
