Easy Taco Mac

Serves 6

Ingredients

  • 1 1/2 cups Whole wheat macaroni
  • 2 tsp Extra virgin olive oil
  • 8 oz 96% Lean Ground Beef
  • 1 1/2 tsp Chili powder
  • 1 Medium yellow onion, diced
  • 1 Zucchini squash, chopped
  • 1 cup Sweet white corn, frozen
  • 1/2 cup Sweet Corn on the Cob, each cut into 3 pieces
  • 1/2 cup Mild Chunky Salsa
  • 4 oz Easy Melt Cheese

Instructions

  1. Cook pasta according to package directions, drain and set aside.
  2. In a large skillet, heat olive oil on medium-high.
  3. Add ground beef and chili powder, and cook until thoroughly browned, approximately 10 minutes. Drain fat and return meat to pan.
  4. Stir in onion, zucchini and corn. Cook until onions are translucent.
  5. Add salsa and cheese and cook until cheese has melted and is creamy.
  6. Mix in pasta and serve.
