Easy Taco Bake

Serves 8

Ingredients

  • 1 tbsp Vegetable Oil
  • 1 lb 93% Lean Ground Beef
  • 1 tbsp Hatch green chile ranch rub
  • 12 oz Pico de Gallo
  • 15.5 oz No salt added black beans, drained
  • 1 cup Frozen corn
  • 8 Yellow corn tortillas, sliced in 1-inch strips
  • 1 cup Light sour cream
  • 1/2 cup Green onion, chopped
  • 1/2 cup Shredded mild cheddar cheese

Instructions

  1. Preheat oven to 350°F.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add ground beef, break apart and cook for several minutes until well browned.
  4. Add seasoning and pico de gallo, then continue to cook for an additional 4 minutes.
  5. Add in black beans, corn, tortillas, and low fat sour cream.
  6. Mix well and transfer to a 9 x 13 baking dish.
  7. Top with green onion and cheese.
  8. Bake uncovered for about 40 minutes or until bubbly and browned.
