Easy Steak Enchilada Soup

Serves 6

Ingredients

  • 1 tbsp Avocado oil
  • 1 lb Skirt steak, cut into thin slices
  • 1 Cookwell & Company Cheese Enchilada Soup
  • 2 cups Chicken broth
  • 4 Yellow corn tortillas, cut into small pieces
  • 8 oz Cream cheese, cubed
  • 1 cup Frozen corn
  • 1/2 cup Fresh cilantro, finely chopped
  • 1/2 cup Green onions, finely chopped
  • 1 Lime, juiced

Instructions

  1. Heat a large pot over medium-high heat.
  2. Add oil and steak to pan and sauté 4 to 5 minutes until cooked through.
  3. Reduce heat to medium and add all ingredients except lime juice to pot.
  4. Stir and bring to a simmer until cheese melts completely.
  5. Remove from heat and add lime juice.
  6. Serve warm and garnish with fresh avocado slices and tortilla chips if desired.
