Easy Steak Enchilada Soup

Serves 6
Ingredients
- 1 tbsp Avocado oil
- 1 lb Skirt steak, cut into thin slices
- 1 Cookwell & Company Cheese Enchilada Soup
- 2 cups Chicken broth
- 4 Yellow corn tortillas, cut into small pieces
- 8 oz Cream cheese, cubed
- 1 cup Frozen corn
- 1/2 cup Fresh cilantro, finely chopped
- 1/2 cup Green onions, finely chopped
- 1 Lime, juiced
Instructions
- Heat a large pot over medium-high heat.
- Add oil and steak to pan and sauté 4 to 5 minutes until cooked through.
- Reduce heat to medium and add all ingredients except lime juice to pot.
- Stir and bring to a simmer until cheese melts completely.
- Remove from heat and add lime juice.
- Serve warm and garnish with fresh avocado slices and tortilla chips if desired.
