Easy Soymilk Cheesecake

Serves 8

Ingredients

  • 8 oz Cream cheese
  • 1 Large eggs
  • 1/2 cup Sour cream
  • 1 Condensed soy milk
  • 1 Graham cracker pie crust

Instructions

  1. Heat oven to 350°F.
  2. Combine cream cheese, egg, sour cream and half container of soy milk in a large mixing bowl.
  3. Beat with a hand mixer until smooth.
  4. Add rest of soy milk (adding milk in two batches gives a smoother texture to cheesecake).
  5. Pour mixture into pie crust.
  6. Bake on center oven rack about 40 minutes (center will jiggle).
  7. Remove from oven and cool to room temperature.
  8. Chill before serving. Serve with fresh fruit if desired.
