Unsaved Easy Sheet Pan Chicken Fajitas

Ingredients

  • 12 oz Fajita vegetables
  • 10 Flour tortillas
  • 1 Half sheet pan
  • 1 3/4 lb Seasoned chicken thighs for fajitas, sliced in half if needed
  • 2 cups Shredded Mexican blend cheese

Instructions

  1. Preheat oven to 400°F.
  2. Using a half sheet pan, arrange chicken fajitas and vegetables in one layer. If desired, season vegetables with salt and pepper to taste.
  3. Bake 25 minutes or until chicken reaches an internal temperature of 165°F.
  4. During the last few minutes of cooking, place tortillas in oven to warm or place in microwave in a damp paper towel for about 30-45 seconds.
  5. To serve, slice chicken and place on tortillas with about a tablespoon of shredded cheese.
  6. If desired serve with salsa or guacamole!
