Easy Sheet Pan Chicken Fajitas

Ingredients
- 12 oz Fajita vegetables
- 10 Flour tortillas
- 1 Half sheet pan
- 1 3/4 lb Seasoned chicken thighs for fajitas, sliced in half if needed
- 2 cups Shredded Mexican blend cheese
Instructions
- Preheat oven to 400°F.
- Using a half sheet pan, arrange chicken fajitas and vegetables in one layer. If desired, season vegetables with salt and pepper to taste.
- Bake 25 minutes or until chicken reaches an internal temperature of 165°F.
- During the last few minutes of cooking, place tortillas in oven to warm or place in microwave in a damp paper towel for about 30-45 seconds.
- To serve, slice chicken and place on tortillas with about a tablespoon of shredded cheese.
- If desired serve with salsa or guacamole!
