Unsaved Easy Sausage Minestrone with Croutons

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 8 oz Italian sausage
  • 48 oz Chicken Stock
  • 1/3 cup Basil pesto
  • 14.5 oz Diced tomatoes with garlic & olive oil
  • 6 oz Cavatelli pasta
  • 1 oz Baby spinach, roughly chopped
  • 2 oz Onion and garlic croutons

Instructions

  1. Place a large soup pot over medium heat. Once hot, add oil and sausage. Cook and break apart with a spoon until well browned, about 6 to 7 minutes.
  2. Once browned, add broth, pesto and tomatoes and bring to a simmer.
  3. Add pasta to soup and cook until tender, but not soft.
  4. Remove from heat then gently stir in spinach and serve with croutons.
  5. Chef's Note: Add Parmesan cheese, if desired.
