Easy Sausage Minestrone with Croutons

Serves 6
Ingredients
- 1 tbsp Extra virgin olive oil
- 8 oz Italian sausage
- 48 oz Chicken Stock
- 1/3 cup Basil pesto
- 14.5 oz Diced tomatoes with garlic & olive oil
- 6 oz Cavatelli pasta
- 1 oz Baby spinach, roughly chopped
- 2 oz Onion and garlic croutons
Instructions
- Place a large soup pot over medium heat. Once hot, add oil and sausage. Cook and break apart with a spoon until well browned, about 6 to 7 minutes.
- Once browned, add broth, pesto and tomatoes and bring to a simmer.
- Add pasta to soup and cook until tender, but not soft.
- Remove from heat then gently stir in spinach and serve with croutons.
- Chef's Note: Add Parmesan cheese, if desired.
