Easy Rice and Cheese Casserole

Ingredients

  • 4 Split Top White Bread slices, crusts removed
  • 2 cups Whole Milk
  • 3 cups Long grain rice, cooked
  • 3 cups Shredded mild cheddar cheese
  • 3 Large eggs, beaten
  • 4 oz Diced mild peeled green chiles
  • 1 tsp Kosher salt
  • 1/2 tsp Ground black pepper

Instructions

  1. Preheat oven to 350°F.
  2. Grease an 8 x 8-inch baking dish or 2-quart casserole.
  3. Mix bread and milk in large bowl.
  4. Allow bread to soak for 5 minutes.
  5. Tear up bread with a fork into small pieces; leave in milk.
  6. Add rice, cheese, eggs, green chilies, salt and pepper to milk and bread mixture.
  7. Stir well, then pour into baking dish.
  8. Bake for 45-60 minutes, or until center is firm.
