Easy Poached Salmon

Ingredients
- 4 Salmon fillets
- 1/2 tsp Kosher salt
- 1/2 tsp Ground black pepper
- 2 Fresh lemons, juiced
- 1 Large navel orange, juiced
- 1 cup White wine
Instructions
- Season salmon with salt and pepper, then set aside.
- Pour lemon and orange juice into a medium saucepan, then add wine and 1 cup water and bring to boil.
- Place a large skillet over medium heat, then add enough hot juice to measure about an inch deep; add salmon fillets, and bring to light simmer; cover and cook 7-10 minutes until desired degree of doneness.
