  • 12 oz Tuna packed in water, drained
  • 6 oz Fresh spinach
  • 1 Fresh lemons, juiced
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper
  • 1/4 cup Parmesan cheese, freshly shredded

Instructions

  1. Cook pasta in boiling water according to package directions.
  2. While pasta cooks, heat olive oil in large skillet on medium heat.
  3. Add garlic and hot pepper flakes; sauté 2 minutes.
  4. Add tuna and shred with fork. Turn heat to low and keep warm.
  5. Just before pasta is ready, set aside 1 cup of hot pasta water; drain pasta and return it to the cooking pot.
  6. Add tuna mixture and fresh greens. Toss to mix, then add some of the reserved pasta water to thin to desired consistency.
  7. Add fresh lemon juice, salt and pepper.
  8. Divide among plates or pasta bowls, garnish with Parmesan cheese and serve immediately.
