Easy Pasta & Tuna Skillet

Serves 4
Ingredients
- 8 oz Dry spaghetti
- 1/4 cup Extra virgin olive oil
- 2 tsp Peeled garlic cloves, minced
- 1/4 tsp Crushed red pepper flakes
- 12 oz Tuna packed in water, drained
- 6 oz Fresh spinach
- 1 Fresh lemons, juiced
- 1/8 tsp Kosher salt
- 1/8 tsp Ground black pepper
- 1/4 cup Parmesan cheese, freshly shredded
Instructions
- Cook pasta in boiling water according to package directions.
- While pasta cooks, heat olive oil in large skillet on medium heat.
- Add garlic and hot pepper flakes; sauté 2 minutes.
- Add tuna and shred with fork. Turn heat to low and keep warm.
- Just before pasta is ready, set aside 1 cup of hot pasta water; drain pasta and return it to the cooking pot.
- Add tuna mixture and fresh greens. Toss to mix, then add some of the reserved pasta water to thin to desired consistency.
- Add fresh lemon juice, salt and pepper.
- Divide among plates or pasta bowls, garnish with Parmesan cheese and serve immediately.
