Easy Mushroom Sausage Mascarpone Lasagna

Unsaved Easy Mushroom Sausage Mascarpone Lasagna

Ingredients

  • 1 tbsp Olive oil
  • 1 lb Italian Sausage
  • 1 tbsp Fresh garlic clove, finely minced
  • 22.9 oz Mushroom ragu
  • 6 oz Oven Ready Lasagna Noodles, broken to fit size of pan
  • 8 oz Mascarpone Cheese, softened to room temperature
  • 2 oz Baby Spinach
  • 1/2 cup Grated Three Cheese Blend, (Parmesan, Romano and Asiago)
  • 1 cup Shredded whole milk mozzarella, (about 4 oz.)

Instructions

  1. Preheat a large skillet over medium-high heat. Add oil and sausage to hot skillet, stirring and breaking up sausage into smaller pieces as it cooks, until well browned.
  2. Reduce heat to medium. Add garlic and mushroom ragu. Stir for 1 to 2 minutes just to heat through. Remove from heat.
  3. Spoon a thin layer of mushroom mixture on bottom of pan, place a layer of uncooked pasta on top then spread a generous layer of mascarpone on the uncooked pasta.
  4. Add a layer of spinach, a thin layer of more sauce followed by a sprinkle of Parmesan on top.
  5. Repeat layering with mascarpone on noodles, followed by spinach, sauce and Parmesan until all of sauce and mascarpone is used. Finish with a generous layer of mozzarella.
  6. Add water around edges of pan and cover with foil. Bake 35 minutes covered then remove foil. Bake another 12 to 15 minutes, just to brown cheese on top. Allow to sit 5 to 6 minutes before cutting. Serve warm.
