Easy Multi-Use Pie Dough

Ingredients
- 2 cups Unbleached All Purpose Flour, sifted, use unbleached flour, if possible
- 4 oz Unsalted Butter, 1 stick, ice cold, grated or diced small
- 1 tsp Kosher salt, if using iodized salt, use 1/2 tsp.
- 3 tbsp Granulated sugar
- 2 Large eggs, yolks only, kept very cold
- 1/2 cup Very cold heavy whipping cream
Instructions
- Add flour, butter, salt and sugar to the bowl of a food processor. Pulse until mixture is just blended.
- In a small bowl whisk egg yolks and cream together.
- Add wet mixture to food processor and pulse until dough holds together. Remove to a sheet of plastic wrap, form dough into a ball and wrap tightly.
- Refrigerate for 15 minutes before rolling out and using for any pie or tart applications.
- Chef's Note: When rolling out pastry, dust counter top or cutting board and top of dough with flour to prevent sticking.
