  • 3 cups Grapeseed oil, plus more as needed for frying
  • 8 Mozzarella sticks

  • 6 Large eggs, whisked until smooth
  • 2 cups Bread crumbs, plus more as needed

Instructions

  1. Place oil in a large heavy bottom pot or Dutch oven and heat to 350ºF.
  2. To ensure cheese stays hard, freeze at least 30 minutes before frying.
  3. Set up three separate shallow dishes, first one with cornstarch, then eggs, and finally breadcrumbs.
  4. Take each cheese stick and dredge into cornstarch, then eggs and then breadcrumbs. Coat each stick thoroughly with all ingredients.
  5. Gently lower each cheese stick into hot oil and keep moving them around so they don't stick to bottom of pan. Be careful not to overcrowd oil, fry in batches.
  6. Drain cheese sticks onto a paper towel and allow to cool 5 to 10 minutes before serving with your favorite dipping sauces.
