Easy Fideo with Chicken

Ingredients
- 1 1/2 cups Gluten free spaghetti pasta, broken into 1/2 inch pieces
- 1 tbsp Canola oil
- 1 cup Frozen cut green beans
- 1 Fresh zucchini squash, sliced
- 1 tsp Ground cumin
- 2 Peeled garlic cloves, minced
- 1 cup Diced tomatoes Mexican flavor
- 1 lb Boneless skinless chicken breast, cooked and chopped
- 3 cups Low sodium chicken broth
- 1/8 tsp Kosher salt
- 1/8 tsp Ground black pepper
Instructions
- Heat a large, heavy bottom skillet over high.
- Add pasta and oil and sauté until golden brown.
- Add green beans, zucchini, cumin and garlic. Sauté 2 minutes.
- Stir in tomatoes, chicken and broth. Bring mixture to a boil and cover, then reduce heat to medium-low and cook 8 minutes.
- Season to taste with salt and pepper.
