Easy Fideo with Chicken

Serves 4

Ingredients

  • 1 1/2 cups Gluten free spaghetti pasta, broken into 1/2 inch pieces
  • 1 tbsp Canola oil
  • 1 cup Frozen cut green beans
  • 1 Fresh zucchini squash, sliced
  • 1 tsp Ground cumin
  • 2 Peeled garlic cloves, minced
  • 1 cup Diced tomatoes Mexican flavor
  • 1 lb Boneless skinless chicken breast, cooked and chopped
  • 3 cups Low sodium chicken broth
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper

Instructions

  1. Heat a large, heavy bottom skillet over high.
  2. Add pasta and oil and sauté until golden brown.
  3. Add green beans, zucchini, cumin and garlic. Sauté 2 minutes.
  4. Stir in tomatoes, chicken and broth. Bring mixture to a boil and cover, then reduce heat to medium-low and cook 8 minutes.
  5. Season to taste with salt and pepper.
