Easy Fajita Peppers Fried Rice

Ingredients

  • 2 tbsp Canola oil
  • 1 cup Long Grain Rice
  • 1 cup H-E-B Fajita Vegetables Blend, frozen
  • 8 oz Tomato Sauce
  • 1/2 tsp Ground cumin
  • 1/4 cup Fresh cilantro, chopped

Instructions

  1. Heat a heavy 3-4 quart pot or medium skillet over high heat for 3 minutes.
  2. Add oil and rice and stir-fry rice for 4 minutes or until light golden.
  3. Add fajita blend and stir-fry for 3 more minutes.
  4. Add tomato sauce, 1 cup water, cumin and cilantro.
  5. Bring rice mixture to a boil over high heat; cover, reduce heat to low and cook for 20-25 minutes or until rice is fluffy.
