Unsaved Easy Chicken Posole

Ingredients

  • 2 cups Reduced sodium beef broth
  • 14.5 oz Mexican style stewed tomatoes, undrained
  • 14 oz White hominy, rinsed and drained
  • 2 cups Boneless, skinless chicken breasts, cooked and shredded
  • 1 tsp Ground black pepper
  • 1 Limes, cut in quarters
  • 2 tbsp Fresh cilantro, chopped

Instructions

  1. In a 4-6 quart pot, add all ingredients, except lime and cilantro.
  2. Bring mixture to a boil.
  3. Reduce heat and simmer for 10 minutes.
  4. Ladle soup into bowls and garnish with lime and cilantro.
