Easy Cheesy Veggie Tots

Ingredients

  • 1 Large eggs, (use yolk only)
  • 1 tsp Adobo seasoning
  • 7.1 oz Cauliflower Rice with Broccoli
  • 3 tbsp Almond flour
  • 3/4 cup Shredded monterey jack and habanero cheese
  • 1 Avocado oil, several short bursts of

Instructions

  1. Preheat oven to 450˚F.
  2. Line a sheet pan with parchment or a silicon mat.
  3. In a medium sized bowl, mix together egg yolk and adobo seasoning with a fork. Add cauliflower rice, almond flour and cheese. Stir together with fork.
  4. Using about 1 1/2 tablespoons each, form mixture into tater tot shapes with hands. Lay out on prepared baking sheet. Spray lightly with avocado oil.
  5. Bake for 12 to 14 minutes or until light brown and crispy.
  6. Chef's Note: For even crispier tots, place near broiler for an additional 2 minutes.
