Easy Blackened Snapper

Ingredients

  • 2 Red snapper fillets (about 1 pound), skin removed
  • 3 tbsp Unsalted butter, melted
  • 1/4 cup Blackened seasoning spice blend

Instructions

  1. Cut fillets into 4 portions.
  2. Heat a large, heavy skillet over medium to high heat for 5 minutes, or until skillet is very hot but not smoking.
  3. Meanwhile, brush top sides of fillets with melted butter and sprinkle half of the blackened seasoning blend evenly.
  4. Turn fillets over gently with a spatula, brush second side with butter and sprinkle with remaining seasoning.
  5. Brush skillet with remaining butter.
  6. Sear fish 2-3 minutes per side, or until center turns from clear to opaque (white) and fish is just beginning to flake. Serve over rice if desired.
