Dulce Boniato

Ingredients
- 2 lb Boniatos, peeled and cut into 1/2 inch cubes, place in water to prevent browning
- 2 tsp Salt, divided use
- 2 cups Condensed coconut milk
- 3 cups Whole milk
- 1 1/2 cups Sugar
- 1/2 tsp Ground cardamom
- 1 tbsp Pumpkin pie spice
- 1/3 cup Toasted coconut flakes
Instructions
- Place boniatos in a large pot. Cover with cold water and add 1 teaspoon of salt. Bring to a boil then reduce to a simmer. Cook for 10 to 12 minutes or until boniatos are fork tender. Drain and reserve.
- In a large bowl, whisk together remaining ingredients except the coconut flakes.
- Add boniato to milk mixture and blend until smooth using a stick blender or in batches using a traditional blender.
- Pour blended mixture into a large, heavy-bottom pot over low heat and cook, stirring constantly, until mixture comes to a simmer and thickens to the consistency of melted ice cream.
- Remove from heat and ladle into serving dishes. Cover with plastic wrap and refrigerate for 4 hours or overnight to set.
- Serve cold and garnish with toasted coconut flakes. If desired, top with whip cream as well.
