Duck Fat Roasted Potatoes

Ingredients

  • 2 lb Baby red potatoes, quartered or diced small
  • 1 tbsp Fresh rosemary, chopped
  • 1 tbsp Fresh thyme, chopped
  • 2 tbsp Fresh chives, minced
  • 1/3 cup Duck fat

Instructions

  1. Preheat oven to 450°F.
  2. In a bowl combine potatoes, herbs, a generous pinch of salt, and pepper and melted duck fat. Toss everything together to coat well.
  3. Place potatoes onto a sheet pan lined with foil or parchment and roast for 35 to 45 minutes or until potatoes are nicely browned and crispy.
  4. Toss potatoes halfway through roasting to ensure proper browning. Season to taste as needed.
  5. Chef's Note: I like to garnish these potatoes with a little grated pecorino romano.
