Duck Fat Roasted Potatoes

Ingredients
- 2 lb Baby red potatoes, quartered or diced small
- 1 tbsp Fresh rosemary, chopped
- 1 tbsp Fresh thyme, chopped
- 2 tbsp Fresh chives, minced
- 1/3 cup Duck fat
Instructions
- Preheat oven to 450°F.
- In a bowl combine potatoes, herbs, a generous pinch of salt, and pepper and melted duck fat. Toss everything together to coat well.
- Place potatoes onto a sheet pan lined with foil or parchment and roast for 35 to 45 minutes or until potatoes are nicely browned and crispy.
- Toss potatoes halfway through roasting to ensure proper browning. Season to taste as needed.
- Chef's Note: I like to garnish these potatoes with a little grated pecorino romano.
