Deviled Dragon Eggs

Serves 6
Ingredients
- 3 tbsp Mayonnaise squeeze bottle
- 8 oz Mild guacamole
- 1 Assorted food coloring
- 12 Large eggs
- 1 tsp Kosher salt
- 1 Small Limes, zested
- 1 tbsp Dried cilantro
Instructions
- Place eggs in a pan and add cool water to cover by 1 inch. Bring to a boil over medium heat and simmer 12 minutes.
- Remove eggs from heat and place in cool water for 10 to 15 minutes.
- While eggs are cooling, fill mason jars or tall glasses with water and desired amount of food coloring.
- Roll each cooled egg on counter to crack shell around the entire egg.
- Place cracked eggs in glasses/mason jars with colored water and refrigerate at least 6 hours or overnight for best results.
- Peel eggs then slice in half lengthwise. Reserve yolks in a bowl.
- Mash yolks with guacamole, mayonnaise, lime zest and salt.
- Spoon filling into hard boiled egg halves and top with cilantro. Chill and serve.
