Curry Tuna Salad Wraps

Ingredients

  • 3/4 cup Fat-free Greek yogurt
  • 2 tbsp Lemon, juiced
  • 1 tsp Curry powder
  • 12 oz White meat albacore tuna in water, drained
  • 1 cup Red seedless grapes
  • 1 Celery stalks, diced
  • 2 tbsp Red onions, minced
  • 2 tbsp Blanched slivered almonds, toasted
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper
  • 6 oz Romaine lettuce leaves
  • 1 Large tomato, sliced

Instructions

  1. In a medium bowl, combine yogurt, lemon juice, and curry powder. Add tuna, grapes, celery, onions, and almonds. Mix well and season to taste with salt and pepper.
  2. To serve, place 1/2 cup of tuna mixture into center of each lettuce leaf. Add tomatoes and roll up.
