Curry Spiced Roasted Leg of Lamb

Ingredients
- 2 tbsp Curry powder
- 1 tbsp Turmeric
- 1 tsp Ground ginger
- 2 tsp Onion powder
- 1/2 cup Dried red onion
- 1 tsp Cayenne Pepper Seasoning
- 2 tbsp Kosher salt
- 1 tsp Ground black pepper
- 1 tsp Ground coriander
- 1 tbsp Ground cumin
- 4 lb Leg of lamb, semi boneless
Instructions
- Preheat oven to 375ºF. Create a seasoning blend by combining all the dry ingredients. Mix well.
- Coat lamb leg with 3 tablespoons of seasoning blend. Reserve remaining seasoning for another recipe.
- Place lamb on a rack in a roasting pan and roast 90 minutes or about 22 minutes per pound. Remove from oven and let rest 15 minutes. Carve and serve with Herb Pistachio Chimichurri.
