Curry Spiced Roasted Leg of Lamb

Ingredients

  • 2 tbsp Curry powder
  • 1 tbsp Turmeric
  • 1 tsp Ground ginger
  • 2 tsp Onion powder
  • 1/2 cup Dried red onion
  • 1 tsp Cayenne Pepper Seasoning
  • 2 tbsp Kosher salt
  • 1 tsp Ground black pepper
  • 1 tsp Ground coriander
  • 1 tbsp Ground cumin
  • 4 lb Leg of lamb, semi boneless

Instructions

  1. Preheat oven to 375ºF. Create a seasoning blend by combining all the dry ingredients. Mix well.
  2. Coat lamb leg with 3 tablespoons of seasoning blend. Reserve remaining seasoning for another recipe.
  3. Place lamb on a rack in a roasting pan and roast 90 minutes or about 22 minutes per pound. Remove from oven and let rest 15 minutes. Carve and serve with Herb Pistachio Chimichurri.
