Curried Red Lentils

Ingredients

  • 1 1/2 tbsp Olive oil
  • 1 Small jalapeño pepper, stem removed and quartered (leave seeds if desired)
  • 2 Medium garlic cloves, minced
  • 1 cup Red lentils, rinsed
  • 1/2 tsp Curry powder
  • 1/2 tsp Salt
  • 3 1/2 cups Vegetable broth
  • 1 tbsp Cilantro, stems removed, rough chopped

Instructions

  1. Heat oil in a medium saucepan or skillet on medium-high heat. When hot, add jalapeño and cook for 3 to 4 minutes, stirring frequently.
  2. Add garlic and cook for 30 seconds. Add lentils and curry powder and cook for 1 minute, stirring constantly.
  3. Add salt and vegetable broth, and stir to combine. Bring to a simmer then turn heat down to medium. Simmer, stirring occasionally, until lentils are tender and begin to mash up about 10 to 12 minutes.
  4. Stir in cilantro and remove large pieces of jalapeño if desired. Serve immediately.
