Unsaved Cucumber Tomato Salad with Soft Herbs

Ingredients

  • 1 lb Cucumber, sliced
  • 10 oz Cherry tomatoes, cut in half
  • 1/2 cup Red onions, peeled, cut in half and thinly sliced
  • 1/4 cup Fresh dill, leaves and tender stems finely chopped
  • 1/4 cup Cilantro, leaves only, chopped fine
  • 3 tbsp Lemon juice
  • 1/4 cup Extra virgin olive oil

Instructions

  1. Place everything in a bowl and gently toss to coat herbs and veggies. Season to taste as needed with salt and fresh cracked pepper.
  2. Chef's Note: For best results cover and refrigerate salad for 30 minutes to allow flavors to meld.
