Ingredients
- 8 Roma tomatoes, chopped
- 1 Cucumbers, seeded and sliced on a bias
- 1 Red onion, thin sliced
- 1 tbsp Garlic cloves, chopped
- 3 tbsp Extra virgin olive oil
- 3 tbsp Red wine vinegar
- 1/8 tsp Ground black pepper
- 1/8 tsp Kosher salt
- 1 cup Reduced fat feta cheese, crumbled
- 1 Large avocado, sliced
Instructions
- Combine tomatoes, cucumber, onion, garlic, oil and vinegar in a mixing bowl. Let sit 20 minutes.
- Add salt and pepper.
- Divide tomato mixture among 4 plates and top with crumbled feta and sliced avocado.
