Cucumber Tea Sandwiches

Ingredients

  • 1 Cucumber(s), peeled and thinly sliced
  • 1/2 cup Fresh Italian parsley, chopped
  • 2 oz Boursin Cheese
  • 1/3 cup Sour cream
  • 4 oz Cold smoked sockeye salmon
  • 8 slices H-E-B Bare Bread

Instructions

  1. Allow cheese to set out at room temperature to soften then combine with the sour cream. Mix with a hand mixer until smooth.
  2. Spread cheese mixture on one side of each slice of bread. Layer cucumbers and salmon on top of cheese mixture on one slice of bread. Add second slice of bread cheese side down.
  3. Cut sandwiches into four triangles and dip sides in parsley. Serve chilled.
