Cucumber, Pear and Red Onion Salad with Yogurt and Mint

Serves 6

Ingredients

  • 2 Large English cucumbers, diced small
  • 2 Asian pears, diced small
  • 1 cup Red onions, thin sliced or julienned
  • 1/2 cup Non-fat plain Greek yogurt
  • 2 tbsp Red wine vinegar
  • 1/4 cup Extra virgin olive oil
  • 1 tsp Fresh lemons, zest
  • 1/4 cup Fresh mint, chopped
  • 1 tsp Lemon pepper seasoning

Instructions

  1. In a bowl combine cucumbers, pears and red onions.
  2. In a separate bowl mix yogurt, red wine vinegar, olive oil, lemon zest and fresh mint. Mix well and season with lemon pepper seasoning.
  3. Add yogurt sauce to the salad as needed to dress. Season with more chipotle lemon pepper as needed to taste. *Salad is best served cold.
