Cubano Dog

Serves 4

Ingredients

  • 1 cup Hot house cucumbers, very thinly sliced and cut into half moons
  • 1/2 tsp Dried dill
  • 1 cup White vinegar
  • 3/4 cup Apple cider vinegar
  • 1 tbsp Brown sugar
  • 1/2 tsp Mustard seed
  • 1/2 tsp Kosher salt
  • 1/2 Fresh garlic clove, slivered
  • 4 Pretzel hot dog buns
  • 4 Lightlife Smart Dogs Jumbo Veggie Protein Links
  • 4 Deli plant based ham slices
  • 2 oz Swiss cheese, sliced into 16 strips (1/2 inch each)
  • 4 tsp Yellow mustard, 1 Tsp per dog

Instructions

  1. Turn oven on broil.
  2. In a heat-proof bowl, toss together cucumbers and dill. Set aside.
  3. Heat vinegars, sugar, mustard seed, salt and garlic in a small saucepan over medium-high heat for 3 to 5 minutes until liquids begins to simmer and sugar dissolves. Pour liquid over cucumbers and toss to coat evenly. Cover and place in the refrigerator for at least 1 hour or up to 2 days in advance.
  4. Slice rolls in half.
  5. In a medium saucepan, cover 4 Lightlife Smart Dogs with water.
  6. Bring to a boil; turn off heat. Let dogs sit in water about 2 minutes.
  7. Roll 1 slice of ham around each dog. Place each on half of a roll and place on a baking sheet. Broil dogs about 2 minutes. Remove from broiler and add 4 slices of cheese to each dog. Broil for an additional 1 to 2 minutes or until cheese is melted and the bread is toasted.
  8. Remove from oven. Add mustard to taste and a generous portion of pickles on each dog.
