Crunchy Asian Shrimp Stir-Fry

Serves 4
Ingredients
- 8 oz Shrimp, peeled and deveined, thawed if frozen
- 12 oz Stir fry vegetables
- 1/4 Small red onion, very thinly sliced
- 1 1/2 tbsp Spicy Asian pepper seasoning, divided use
- 1 cup Wonton strips
- 2 tbsp Fresh cilantro, finely chopped
- 1/4 cup Teriyaki sauce
- 4 tbsp Grapeseed oil, divided use
- 1/2 cup Unsalted cashews, Halves & Pieces
Instructions
- Heat a large empty skillet over medium-high heat. While skillet heats, toss shrimp in a medium-size bowl with half of oil and half of seasoning.
- Add shrimp to hot skillet, and cook and toss for 3 to 4 minutes, or until shrimp begin to turn opaque. Transfer to a plate while cooking vegetables.
- Add remaining oil to skillet along with onions and vegetables. Toss to coat then add remaining seasoning and cashews. Stir and cook until vegetables are brightly colored but still slightly crisp, about 5 to 6 minutes.
- Turn heat off and add cooked shrimp, teriyaki sauce, cilantro and wonton crisps. Toss and serve immediately.
