Cronut Bread Custard

Unsaved Cronut Bread Custard

Ingredients

  • 6 Croissant, diced into cubes, approximately 1 quart (4 - 5 cups)
  • 1/2 tsp Fine ground sea salt
  • 6 Glazed vanilla cake doughnuts, diced into bite-sized pieces, approximately 1 quart (4 to 5 cups)
  • 1/4 tsp Ground nutmeg
  • 2 tbsp Vanilla extract
  • 5 Large eggs
  • 3/4 cup Granulated sugar
  • 1/4 tsp Ground cardamom
  • 1 tsp Ground cinnamon
  • 4 cups Heavy whipping cream

Instructions

  1. To make the custard, combine heavy cream with eggs, sugar, vanilla, salt, cinnamon, nutmeg, and cardamom. Blend until smooth, approximately 1 to 2 minutes
  2. In a large bowl, add chopped croissants and donuts and toss until just combined. Add custard and toss until dry ingredients are completely coated and wet
  3. Pour into a 9 x 13-inch casserole dish and use a spatula to press down gently to compress the bread pudding
  4. Cover and refrigerate for at least 30 minutes to allow custard to set up. Meanwhile preheat oven to 350ºF
  5. Bake uncovered for 35 to 45 minutes or until a toothpick inserted in the center of bread pudding pulls out clean and the top is nicely caramelized
  6. Once cooked, remove from oven and allow to cool until just warm before serving. Top each serving with ice cream if desired
  7. Chef's Note: This bread pudding is easily customizable, add your favorite dried fruit or nuts directly to the diced croissants, donuts, and custard. Toss well to incorporate and finish recipe as instructed
