Instructions

  1. In a large Dutch oven set over medium high heat, add bacon and stir-fry 4 to 5 minutes before adding, onions and garlic. Stir-fry for 4 to 5 minutes more until onions are just translucent.
  2. Add mushrooms, sauerkraut, and sausage, continue to cook for 5 more minutes before adding tomatoes, tomato paste and bay leaves. Add chicken stock and bring everything to a gentle simmer for 30 minutes, covered. Remove bay leaves before serving.
  3. Serve with crusty bread if desired and season to taste as needed with salt and pepper.
  4. Chef's Note: For a more authentic bigos soup add 1/4 tsp all spice, and follow same directions.
