Crockpot Polish Bigos "Hunter's Stew"

Serves 8
Ingredients
- 6 Bacon slices, diced small
- 1 Medium white onion, sliced
- 5 Peeled garlic cloves, minced
- 8 oz Mushrooms, sliced
- 2 cups Sauerkraut
- 16 oz Pork and beef smoked sausage links, diced small
- 28 oz Fire roasted diced tomatoes
- 1 tbsp Tomato paste
- 2 Bay leaves
- 32 oz Chicken stock
Instructions
- In a large Dutch oven set over medium high heat, add bacon and stir-fry 4 to 5 minutes before adding, onions and garlic. Stir-fry for 4 to 5 minutes more until onions are just translucent.
- Add mushrooms, sauerkraut, and sausage, continue to cook for 5 more minutes before adding tomatoes, tomato paste and bay leaves. Add chicken stock and bring everything to a gentle simmer for 30 minutes, covered. Remove bay leaves before serving.
- Serve with crusty bread if desired and season to taste as needed with salt and pepper.
- Chef's Note: For a more authentic bigos soup add 1/4 tsp all spice, and follow same directions.
