Crock Pot Asian Apricot Glazed Pork Loin

Ingredients

  • 24 oz Pork tenderloin
  • 1 tsp Kosher salt
  • 1 tsp Ground black pepper
  • 1 Lemon, peeled, grated and juiced
  • 1 tbsp Fresh ginger root, grated
  • 2 Peeled garlic cloves, chopped
  • 6 Green onion, cut into 2-inch sections
  • 6 oz Dried Mediterranean apricots, thin sliced
  • 1 tbsp Dijon mustard
  • 1/2 cup Orange juice

Instructions

  1. Season pork with salt and pepper.
  2. Heat heavy bottom skillet over high heat 3 minutes.
  3. Spray skillet with non-stick cooking spray and sear pork on all sides (about 2 minutes per side).
  4. Place in crock pot and top with lemon peel and juice, grated ginger, garlic, green onions, apricots, Dijon mustard and orange juice.
  5. Cover and cook on high heat for 4 hours.
  6. Cut pork loin into 1-inch slices.
