Crock Pot Asian Apricot Glazed Pork Loin

Ingredients
- 24 oz Pork tenderloin
- 1 tsp Kosher salt
- 1 tsp Ground black pepper
- 1 Lemon, peeled, grated and juiced
- 1 tbsp Fresh ginger root, grated
- 2 Peeled garlic cloves, chopped
- 6 Green onion, cut into 2-inch sections
- 6 oz Dried Mediterranean apricots, thin sliced
- 1 tbsp Dijon mustard
- 1/2 cup Orange juice
Instructions
- Season pork with salt and pepper.
- Heat heavy bottom skillet over high heat 3 minutes.
- Spray skillet with non-stick cooking spray and sear pork on all sides (about 2 minutes per side).
- Place in crock pot and top with lemon peel and juice, grated ginger, garlic, green onions, apricots, Dijon mustard and orange juice.
- Cover and cook on high heat for 4 hours.
- Cut pork loin into 1-inch slices.
