Crispy Tofu Stir Fry

Ingredients
- 14 oz Extra firm tofu
- 2 tbsp Sesame seeds
- 2 tbsp Avocado oil, divided use
- 12 oz Fresh vegetable stir fry medley
- 1/2 cup Red onion, very thinly sliced
- 3 oz Asian peanut sauce
Instructions
- Slice tofu into 1/2-inch thick slices and place in a single layer between paper towels on a plate. Place another plate on top of paper towels and weigh the plate down with a large pan to press out excess liquid from tofu. Allow to drain for 15 minutes.
- Place sesame seeds on a plate and press drained tofu into sesame seeds to coat on both sides.
- Heat a large skillet over medium-high heat and add oil. Place tofu in pan and sear for 2 to 3 minutes on both sides until golden brown. Remove from pan. Cut drained tofu into bite-sized pieces and cover to keep warm.
- Add remaining oil to the pan and add vegetables and onion slices. Stir and cook for 3 to 4 minutes until vegetables start to soften. Reduce heat to medium and add about 1/3 cup of water to the pan. Cover and steam vegetables for 3 to 4 more minutes until tender, but not mushy.
- Remove lid and add peanut sauce. Toss to coat vegetables and return tofu to pan. Stir gently to combine. Garnish with cilantro if desired.
