Crispy Smashed Potatoes with Pecorino

Ingredients
- 16 oz Frozen Italian herb baby whole potatoes
- 1/4 cup Canola oil, plus more as needed for frying
- 2 tbsp Fresh chives, chopped fine
- 1/4 cup Grated Pecorino Romano
Instructions
- Place frozen bag of potatoes in microwave and cook according to package instructions. Allow to cool.
- While potatoes are cooling, preheat a large non-stick pan over medium-high heat.
- Gently smash each potato flat, making sure they stay together and don't fall apart.
- Add oil to hot pan. When oil is hot, add potatoes and fry 2 to 4 minutes per side or until nice and crisp on each side. Remove from pan to drain on paper towels.
- Place on a serving plate, garnish with chopped chives and Pecorino Romano as desired.
