Crispy Smashed Potatoes with Pecorino

Ingredients

  • 16 oz Frozen Italian herb baby whole potatoes
  • 1/4 cup Canola oil, plus more as needed for frying
  • 2 tbsp Fresh chives, chopped fine
  • 1/4 cup Grated Pecorino Romano

Instructions

  1. Place frozen bag of potatoes in microwave and cook according to package instructions. Allow to cool.
  2. While potatoes are cooling, preheat a large non-stick pan over medium-high heat.
  3. Gently smash each potato flat, making sure they stay together and don't fall apart.
  4. Add oil to hot pan. When oil is hot, add potatoes and fry 2 to 4 minutes per side or until nice and crisp on each side. Remove from pan to drain on paper towels.
  5. Place on a serving plate, garnish with chopped chives and Pecorino Romano as desired.
