Crispy Seared Pork Jowl

Ingredients

  • 1 1/2 lb Smoked pork jowl, sliced into 1/4-inch pieces
  • 2 tsp Black pepper grinder, plus more as needed
  • 2 tsp Kosher salt, plus more as needed
  • 1 tsp Granulated sugar
  • 2 tbsp Canola oil

Instructions

  1. Chef's Note: These are best served glazed with Coke Gastrique recipe available on heb.com.
  2. Season each jowl with salt, pepper and sugar. Sear for 3 to 4 minutes per side or until nicely crispy.
  3. Set a cast iron pan over medium high heat. Add oil and allow to get hot.
