Crispy Roasted Orange Pepper Chicken with Fennel

Ingredients
- 3 lb Chicken leg quarters, approximately 4 each
- 1 tbsp Orange pepper seasoning, as needed
- 1 Fresh fennel, green tops trimmed off, root bottom trimmed, and fennel thinly sliced whole
Instructions
- Season chicken liberally with orange pepper seasoning on all sides.
- Place sliced fennel evenly over air fryer mesh rack to cover completely.
- Place seasoned leg quarters on top of fennel to create a barrier to keep chicken from sticking.
- Place chicken in air fryer, set to chicken setting and add 10 minutes (making it 40 minutes total cooking time).
- Once timer on Air fryer is done, check temperature of chicken to make sure internal temperature is at least 170ºF.
- Allow chicken to rest before serving over rice or zucchini noodles.
