Crispy Roasted Garlic Swai

Serves 4

Ingredients

  • 1 tsp Dried basil
  • 1/4 cup Grapeseed oil
  • 2 Large brown eggs, beaten
  • 4 Pangasius fillets, (may also be called Pangasius)
  • 1 1/2 cups Roasted garlic panko bread crumbs
  • 1 cup Unbleached, all-purpose flour

Instructions

  1. Gently wash fish fillets and pat dry with a paper towel.
  2. Spread flour evenly on a dinner sized plate.
  3. Place beaten eggs in a shallow pie pan.
  4. Spread bread crumbs out on another dinner plate. Mix basil through bread crumbs with a fork.
  5. Evenly and completely coat each fish fillet in flour, eggs, then bread crumb mixture.
  6. Place on a plate and chill while skillet heats up.
  7. Heat a large skillet over medium heat. Add oil and let it get hot, but not smoking.
  8. Add fish fillets two at a time to pan and sear 4 to 5 minutes on each side, or until a crispy golden brown crust is formed on each side. Remove from pan, and keep warm.
  9. Carefully wipe crumbs from pan using a paper towel and tongs. Repeat process with remaining oil and 2 fish fillets.
  10. Serve immediately with pasta or rice.
