Crispy Pan Roasted Baby Potatoes

Ingredients

  • 16 oz Frozen baby whole potatoes, thawed enough to cut easily
  • 1/3 cup Grapeseed Oil, or as needed to fry potatoes
  • 2 tbsp Fresh chives, minced

Instructions

  1. Place a medium-sized non-stick sauté pan over low to medium-low heat. Allow to get hot.
  2. Cut baby potatoes in half and set aside. Once pan is hot, add approximately 2 tablespoons of oil and swirl to coat.
  3. Place potatoes cut-side down in pan and cook, adding 2 tablespoons of oil at a time as it is absorbed by the potatoes.
  4. Continue to cook until potatoes are very crispy with a soft interior, about 15 to 25 minutes depending on the heat of the pan.
  5. Season to taste and cool for at least 5 minutes before serving.
  6. Garnish with fresh chives and serve with sour cream on the side if desired.
