Crispy Honey Pepper Chicken

Ingredients
- 1 tsp Ground black pepper, plus more as needed
- 1/4 cup Honey
- 1/4 cup Rice vinegar
- 2 tbsp Soy sauce
- 2 tbsp Oyster sauce
- 1/4 cup Water
- 1 1/4 tsp Corn starch
- 2 lb Boneless, skinless chicken breasts, diced into approximately 1 inch chunks
- 3/4 cup Rice flour, plus more as needed to coat
- 2 tbsp Toasted sesame oil
- 1/2 cup Vegetable oil
- 4 Garlic cloves, thinly sliced
- 1/3 cup Green onions, thinly sliced, plus more for garnishing
Instructions
- In a bowl, combine pepper, honey, rice vinegar, soy sauce, oyster sauce, water and cornstarch; whisk and set aside.
- Place a large non-stick skillet or wok over medium-high heat.
- In a bowl coat chicken with rice flour and a pinch of salt and pepper; toss and sift off any remaining flour.
- Add sesame oil and vegetable oil to pan.
- Place coated chicken, garlic and green onions in hot oil. Stir-fry until chicken is crispy on all sides and fully cooked, approximately 8 to 10 minutes. Transfer to a plate.
- Add honey mixture to same pan, whisk and continue to cook until nicely thickened.
- Return chicken to pan and toss to coat thoroughly with sauce. Season to taste and serve over rice or vegetables and garnish with more green onions if desired.
