Unsaved Crispy Garbanzo and Mushroom Tacos

Ingredients

  • 4 oz Organic low sodium garbanzo beans, drained and rinsed
  • 1 1/2 tsp 25% less sodium taco seasoning mix
  • 12 oz Fresh mushroom & onion blend fajita tray
  • 4 Grain-free taco shells
  • 8 oz 50/50 blend fresh mild guacamole pico, mix together thoroughly before serving

Instructions

  1. Preheat oven to 400ºF. Spread garbanzo beans out in a single layer on a rimmed baking sheet. Spray lightly with oil, sprinkle seasoning over beans, and toss to coat. Roast beans for 25 minutes.
  2. While beans are cooking, heat a large skillet over medium heat. Spray pan with oil and add mushroom mixture. Stir and cook until onions are soft and mushrooms are nicely browned. Use additional spray oil as needed.
  3. To build tacos, spoon mushroom mixture into taco shells and top with guacamole and garbanzo beans.
